THE ASSIGNMENT:
BUILD A MENU
Historically, fire and water created steam to power the Pocketbook Factory’s textile looms. Inspired by these vapors, ZÉZÉ is drawing on these elemental forces to bring their three-meal restaurant, which is centered around an open cooking hearth, and other dining spaces to life with cross-cultural food and beverage offerings borne from water, fire, and earth.
︎ Build a restaurant menu that transforms raw ingredients into ethereal dishes
︎ Source and research regional and sustainable food producers and farms
︎ Help to conceptualize ZÉZÉ’s larder, a space for experimentation and education around fermentation and other food preservation processes
︎ Create and curate beverages and libations based on botanicals and indigenous ingredients that inspire congeniality
YOU:
Chefs, restaurateurs, bartenders, and hospitality professionals who are passionate about the power of and experience of food and beverage across several of ZÉZÉ’s dining and drinking venues, from its restaurant, cafe, spa, in-room dining, to nightclub.
